Abstract

This training aims to enhance students' knowledge and skills in processing food based on a nutritional diet for the elderly, who often face health issues such as hypertension, diabetes, and osteoporosis. Using a one-group pretest-posttest design, data were analyzed with the Wilcoxon Signed Ranks Test and N-Gain to evaluate the training’s effectiveness. The Wilcoxon test results showed a significant improvement, with a Z-value of -2.371 and p = 0.018, indicating a significant difference between pretest and posttest scores. The N-Gain score averaged 0.4742, indicating a moderate improvement in participants' knowledge. The pretest average score was 68.33, which increased to 90.83 in the posttest. The satisfaction survey revealed that participants found the training useful, with materials relevant to their needs. Additionally, the training motivated participants to explore entrepreneurship opportunities in elderly food processing.
