Abstract

Penelitian ini bertujuan untuk mengungkap sejarah perkembangan Gudeg Yu Djum Pusat Yogyakarta dari tahun 2013-2018, serta peran kuliner tersebut sebagai simbol identitas budaya masyarakat Yogyakarta. Metode yang digunakan dalam penelitian ini adalah metode sejarah dengan pendekatan deskriptif analitis. Data diperoleh dari wawancara dengan pihak pengelola Gudeg Yu Djum dan dokumentasi langsung di beberapa cabang Gudeg Yu Djum Pusat. Penelitian ini mengangkat perkembangan signifikan Gudeg Yu Djum selama periode 2013-2018, termasuk dalam ekspansi usaha, inovasi produk seperti gudeg kalengan, serta pemanfaatan media digital untuk pemasaran. Meskipun mengalami modernisasi, Gudeg Yu Djum tetap mempertahankan nilai-nilai tradisional dalam proses produksi dan penyajiannya. Hasil penelitian menunjukan bahwa dalam periode 2013-2018, Gudeg Yu Djum bukan sekedar produk kuliner, melainkan juga sarana pelestarian budaya Jawa yang merepresentasikan niai kesabaran, keharmonisan, dan gotong royong. Dengan demikian, penelitian ini memberikan pemahaman mendalam mengenai peran penting kuliner tradisional dalam memperkuat identias budaya lokal. Kata kunci: Gudeg Yu Djum, identitas budaya, kuliner tradisional, Yogyakarta, sejarah usaha, symbol budaya. **** This study aims to reveal the historical development of Gudeg Yu Djum Pusat Yogyakarta from 2013 to 2018, as well as the role of this culinary tradition as a symbol of cultural identity for the people of Yogyakarta. The research method used is historical research with a descriptiveanalytical approach. Data were obtained through interviews with the management of Gudeg Yu Djum and direct documentation at several Gudeg Yu Djum Pusat branches. This study highlights the significant development of Gudeg Yu Djum during the 2013–2018 period, including business expansion, product innovation such as canned gudeg, and the use of digital media for marketing. Despite modernization, Gudeg Yu Djum has continued to preserve traditional values in its production and presentation processes. The findings show that between 2013 and 2018, Gudeg Yu Djum was not merely a culinary product, but also a medium for preserving Javanese culture that represents the values of patience, harmony, and mutual cooperation. Thus, this study provides a deep understanding of the important role traditional cuisine plays in strengthening local cultural identity.
