Abstract

*** This study aims to develop a prototype of a red apple sorting tool based on ripeness using a multi-sensor system integrated with an ESP32 microcontroller. The main problem in the apple sorting process in Indonesia is that it is still done manually so it is subjective which has an impact on product quality decline and economic losses. The research method used is Research and Development (R&D) with a V model approach, which includes the design, implementation, and system testing stages in a structured manner. The developed system uses a combination of several sensors, namely an Infrared sensor to detect the location of apples, a TCS34725 color sensor to estimate sugar content (Brix) based on color and a TCS3200 sensor for RGB values of fruit skin. Data from the sensors is processed by the ESP32 to determine the classification of apple ripeness levels into raw, ripe, and overripe categories. The results of the study show that the multi-sensor-based sorting system is able to increase the accuracy of the sorting process compared to manual methods. By implementing a multi-stage filtering method, the system only passes fruit that meets all predetermined ripeness parameters, resulting in a more objective and consistent classification. Furthermore, the use of conveyors and servo actuators allows for automated, real-time sorting. Keywords: Apples, Brix, ESP32, Fruit Ripeness, Multi-sensor.
