Abstract

Tujuan dari penelitian ini adalah untuk merekonstruksi sejarah Nasi Grombyang Warso sejak merintis usahanya sampai dengan berhasil mempunyai kios sendiri, maka peneliti melakukan penelitian dengan judul “EKSISTENSI NASI GROMBYANG WARSO DI KABUPATEN PEMALANG (1978-1992)”. Metodologi penelitian yang digunakan adalah metode historis dengan teknik pengumpulan data adalah dokumentasi dan wawancara. Penelitian ini memiliki subjek Warso dan disimpulkan bahwa: 1. Terdapat beberapa hal yang membuat Nasi Grombyang Warso menjadi ikon Nasi Grombyang khas Pemalang (mempertahankan keaslian rasa, kualitas bahan baku, dan pelayanan terhadap konsumen); 2. Terdapat beberapa usaha Warso dalam merintis usaha Nasi Grombyang (Menggunakan resep turun-menurun dan tidak merubahnya walaupun beralih menggunakan daging sapi, menggunakan kayu bakar dan perkakas masak tradisional untuk meningkatkan cita rasa masakan, dan selalu ramah dalam melayani pelanggan); 3. Terdapat beberapa strategi yang dilakukan Warso untuk meningkatkan potensi usahanya (Menjaga hubungan baik dengan pelanggan, mengikuti teknologi dengan mencari review positif pelanggan di Google, dan terus memperhatikan perkembangan usaha Nasi Grombyang di Kabupaten Pemalang) Annas Eka Wardhana. The aims of this study is to reconstruct the history of Nasi Grombyang Warso since he began his business until he succeed having his own food stall, the authors conducted a study entitled “Existence of Nasi Grombyang Warso in Pemalang Regency (1978- 1992)”. This study used the historical method. Data collection techniques are documentation and interview. Subject for this research is Warso. Conclutions from this study are: 1. There are several things that make Nasi Grombyang Warso become an icon in Pemalang Regency (maintaining the authenticity of taste, quality of raw materials, and service to consumers); 2. Warso made several efforts at the beginning of his business (using the recipes passed down from generation to generation without any change even though they switching it with beef, using the firewood and traditional cooking utensils to enhance the taste of the dishes, and always hospitable/friendly in serving the customers); and 3. There are several strategies by Warso to increase his business potency (maintaining a good relations with customers, keeping up with the technological advance by searching for customers positive review on Google, and keep on paying attention to the development of Nasi Grombyang business in Pemalang regency).
