Abstract

Penelitian dilakukan untuk menganalisis pengaruh penggunaan pure kulit pisang kepok pada pembuatan American cookies terhadap daya terima konsumen. Penelitian ini dilakukan di Laboratorium Pengolahan Pastry dan Bakery Program Studi Pendidikan Tata Boga, Fakultas Teknik, Universitas Negeri Jakarta. Metode yang digunakan dalam penelitian ini adalah metode eksperimen dan dilanjutkan dengan metode survey secara organoleptik untuk mengetahui daya terima konsumen, sampel penelitian ini adalah American cookies dengan penggunaan pure kulit pisang kepok dengan persentase 10%, 20%, dan 30%. Analisis data menggunakan uji friedman dan dilanjutkan dengan uji tukey. Uji panelis menggunakan 25 panel agak terlatih yang menilai aspek warna, aroma, rasa, tekstur bagian dalam, tekstur bagian luar, remah, dan bentuk. Berdasakan hasil uji friedman pada American cookies dengan penggunaan pure kulit pisang kepok terdapat pengaruh penggunaan pure kulit pisang kepok pada American cookies terhadap aspek warna, aroma, rasa, tekstur bagian luar, remah, dan bentuk. Tidak terdapat pengaruh penggunaan pure kulit pisang kepok pada American cookies terhadap aspek tekstur bagian dalam. Hasil uji lanjutan tukey pada aspek warna, aroma, rasa, tekstur bagian luar, remah, dan bentuk didapatkan hasil American cookies pure kulit pisang kepok yang baik dan disukai konsumen dengan perlakuan terbaik yaitu 10% dan 20%. Maka dari itu, sesuai dengan tujuan penelitian untuk mengoptimalkan penggunaan pure kulit pisang kepok, maka produk yang direkomendasikan adalah formula dengan penggunaan 20% pure kulit pisang kepok. Kata Kunci: American cookies, Daya Terima Konsumen, Pure Kulit Pisang Kepok ***** This research aimed to analyze the influence of using banana peel puree in making American cookies on consumer acceptance. The study was conducted at the Pastry and Bakery Processing Laboratory of the Culinary Education Program, Faculty of Engineering, Universitas Negeri Jakarta. The method employed in this research was experimental, followed by organoleptic survey methods to determine consumer acceptance. The research samples were American cookies with kepok banana peel puree at percentages of 10%, 20%, and 30%. Data analysis was performed using the Friedman test, followed by the Tukey test. The panelists consisted of 25 moderately trained individuals who assessed aspects such as color, aroma, taste, inner texture, outer texture, crumb, and shape. Based on the Friedman test results for American cookies with kepok banana peel puree, there was a significant influence on color, aroma, taste, outer texture, crumb, and shape. However, there was no significant impact on the inner texture. Further Tukey tests on color, aroma, taste, outer texture, crumb, and shape revealed that American cookies with 10% and 20% kepok banana peel puree were well-received and preferred by consumers. Therefore, in line with the research objective to optimize the use of kepok banana peel puree, the recommended product formula is one with 20% kepok banana peel puree.
