Abstract

Penelitian bertujuan untuk mengetahui apakah penerapan media video tutorial minuman mocktail efektif dalam meningkatkan pengetahuan mahasiswa Pendidikan Tata Boga. Metode yang digunakan dalam penelitian ini adalah metode pre-experimental. Pada metode ini menggunakan tipe desain penelitian one group pre-test post-test design. Unit sampling adalah mahasiswa aktif Program Studi Pendidikan Tata Boga berjumlah 30 orang. Uji statistik yang digunakan adalah paired sample t-test. Hasil penelitian diperoleh nilai rata-rata (mean) pre-test sebesar 54,8 dan nilai rata-rata (mean) post-test sebesar 81,7 terdapat selisih sebesar 26,9. Hasil pengujian hipotesis menggunakan paired sample t test diperoleh nilai signifikansi 0,00001 lebih kecil dari nilai p value 0,05 dan diperoleh nilai t hitung sebesar 13,09 dan nilai t tabel 2,04, artinya nilai t hitung lebih besar dari nilai t tabel maka H0 ditolak dan H1 diterima. Hasil n-gain mengalami peningkatan sebesar 0,57 masuk dalam kategori peningkatan sedang. Berdasarkan hasil penelitian menunjukkan bahwa media pembelajaran video tutorial minuman mocktail efektif digunakan pada mata kuliah Tata Hidang sub materi minuman mocktail untuk meningkatkan pengetahuan mahasiswa Pendidikan Tata Boga di Universitas Negeri Jakarta. Indikator mengidentifikasi fungsi dan syarat garnish menjadi indikator dengan peningkatan paling tinggi, sementara itu indikator jenis-jenis teknik dasar pembuatan minuman mocktail menjadi indikator dengan peningkatan paling rendah atau kurang maksimal. Kata Kunci: Peningkatan Pengetahuan, Pengujian Efektivitas, Video Tutorial, Mocktail, Tata Hidang. The research aims to find out whether the application of mocktail drink tutorial video media is effective in increasing the knowledge of Culinary Education students. The method used in this research is a pre-experimental method. This method uses a one group pre-test post-test design type of research design. The sampling unit was active students of the Culinary Education Study Program, totaling 30 people. The statistical test used is the paired sample t test. The research results obtained an average (mean) pre-test score of 54.8 and an average (mean) post-test score of 81.7, with a difference of 26.9. The results of hypothesis testing using the paired sample t test obtained a significance value of 0.00001 which is smaller than the p value of 0.05 and obtained a t value of 13.09 and a t table value of 2.04, meaning that the t value is greater than the t table value so H0 rejected and H1 accepted. The n-gain results increased by 0.57, which is in the moderate increase category. Based on the results of the research, it shows that the mocktail drink tutorial video learning media is effectively used in the Cooking Course, mocktail drink sub-material to increase the insight of Culinary Education students at Jakarta State University. The indicators for identifying the function and condition of garnishes are the indicators with the highest increase, and the indicators for the types of basic techniques for making mocktail drinks are the indicators with the lowest or less than maximum increase.
