Abstract

Penelitian ini bertujuan untuk menciptakan produk yang memuaskan dan memikat pelanggan serta membangun merek yang akan dikenal dan diakui di pasar. Penelitian dilakukan di Laboratorium Pastry dan Bakery, Program Studi Seni Kuliner dan Pengelolahan Jasa Makanan, Fakultas Teknik, Universitas Negeri Jakarta yang dimulai pada bulan Mei hingga bulan Juni 2024. Jumlah yang dipasarkan dalam 1 bulan yaitu 72 toples produk mandarin cookies. Sasaran penjualan pada produk mandarin cookies yaitu kelas menengah dan kelas atas yang menjangkau semua kalangan baik pria maupun wanita, anak-anak sampai dewasa. Hasil data pada penjualan produk mandarin cookies sudah tercapai omzet senilai Rp 1.800.000 dari target omzet senilai Rp 1.500.000 dalam satu bulan dengan kenaikan omzet sebanyak 20% dari 100% target omzet, dan pengembalian modal selama 3 bulan. Promosi yang dilakukan melalui whatssap, instagram, tiktok, dan promosi secara langsung. Kenaikan harga jual di tetapkan sebanyak 45% dengan harga jual satu toples senilai Rp 25.000. Pemasaran pada produk mandarin cookies dilakukan di wilayah Jakarta Selatan, Jakarta Timur dan Bogor, pada waktu di jam 10.00 – 17.00 WIB. Untuk penjualan produk mandarin cookies selanjutnya harus dibuat lebih banyak varian rasa, menjalin kerja sama dengan influencer agar produk mandarin cookies semakin dikenal, dan pada pengemasan dibuat dalam bentuk standing pouch agar lebih murah untuk harga jual. ********** This research aims to create products that satisfy and attract customers and build a brand that will be known and recognized in the market. The research was conducted in the Pastry and Bakery Laboratory, Culinary Arts and Food Service Management Study Program, Faculty of Engineering, State University of Jakarta from May to June 2024. The number marketed in 1 month is 72 jars of mandarin cookies products. The sales target for mandarin cookies products is the middle class and upper class that reaches all groups of men and women, children to adults. The data results on the sale of mandarin cookies products have achieved a turnover of Rp 1,800,000 from the target turnover of Rp 1,500,000 in one month with an increase in turnover of 20% from 100% of the target turnover, and a return on capital for 3 months. Promotion is carried out through whatssap, instagram, tiktok, and direct promotion. The increase in selling price is set at 45% with a selling price of one jar worth IDR 25,000. Marketing of mandarin cookies products is carried out in the South Jakarta, East Jakarta and Bogor areas, during the hours of 10:00 - 17:00 WIB. For the next sale of mandarin cookies products, more flavors must be made, collaborate with influencers so that mandarin cookies products are increasingly recognized, and the packaging is made in the form of a standing pouch to make it cheaper for the selling price.
