Abstract

Tujuan penelitian ini adalah untuk mengembangkan dan menilai kelayakan media pembelajaran video tutorial materi Russian Service dalam mata kuliah Penataan dan Pelayanan Restoran bagi mahasiswa Pendidikan Tata Boga. Lokasi penelitian berada di laboratorium praktik SMKN 27 Jakarta yang digunakan untuk produksi video dan laboratorium Tata Hidang Program Studi Tata Boga Fakultas Teknik Universitas Negeri Jakarta yang digunakan untuk penilaian produk media. Penelitian ini menggunakan model pengembangan 4D oleh Thiagarajan, Semmel, dan Semmel yang meliputi empat tahapan: define (pendefinisian), design (perancangan), develop (pengembangan), dan disseminate (penyebaran). Video tutorial yang dihasilkan terdiri dari dua bagian: video pertama menjelaskan konsep dasar dan persiapan pelayanan Russian service, sedangkan video kedua menggambarkan seluruh proses pelayanan dari kedatangan hingga kepulangan tamu. Validasi media dilakukan oleh ahli materi, ahli media, dan ahli bahasa, sementara uji coba dilakukan dengan mahasiswa melalui tiga tahap: one to one, small group, dan field test. Hasil validasi menunjukkan tingkat kelayakan sangat tinggi, dengan skor rata-rata 87,14% dari para ahli, yang berarti media ini sangat layak digunakan. Uji coba dengan mahasiswa juga menunjukkan hasil yang sangat positif, dengan skor rata-rata 88,64%. Ini menunjukkan bahwa video tutorial ini sangat efektif sebagai alat bantu pembelajaran Russian service, dan dapat diakses baik online maupun offline sesuai kebutuhan pengguna. ***** The objective of this research is to develop and assess the feasibility of an instructional tutorial video on Russian Service within the Restaurant Arrangement and Service course for Culinary Education students. The research location is at the SMKN 27 Jakarta practice laboratory, used for video production, and the Table Setting laboratory of the Culinary Arts Study Program, Faculty of Engineering, Jakarta State University, used for media product assessment. This research employs the 4D development model by Thiagarajan, Semmel, and Semmel, which includes four stages: define, design, develop, and disseminate. The resulting video tutorial consists of two parts: the first video explains the basic concepts and preparation of Russian service, while the second video illustrates the entire service process from guest arrival to departure. Media validation was conducted by material experts, media experts, and language experts, while trials were conducted with students through three stages: one to one, small group, and field test. Validation results show a very high feasibility level, with an average score of 87.14% from the experts, indicating that this media is highly feasible for use. Trials with students also showed very positive results, with an average score of 88.64%. This indicates that the video tutorial is highly effective as a learning tool for Russian service and can be accessed both online and offline according to user needs
