Abstract

Keamanan pangan jajanan anak sekolah menjadi isu penting yang perlu mendapatkan perhatian serius. Data WHO (2020) memperkirakan sekitar 2 juta anak meninggal setiap tahun akibat mengonsumsi makanan tidak aman. Di Indonesia, 15,9% Kejadian Luar Biasa (KLB) keracunan pangan terjadi di lingkungan pendidikan, khususnya Sekolah Dasar (BPOM, 2020). Anak usia sekolah dasar termasuk kelompok rentan karena sistem imunnya yang belum sempurna. Melihat kondisi tersebut, penelitian ini bertujuan untuk menganalisis tingkat pengetahuan, sikap, dan praktik keamanan pangan penjual jajanan di lingkungan Sekolah Dasar Kelurahan Menteng Dalam, Jakarta Selatan yang bertujuan agar menjadi acuan dalam pengembangan program edukatif untuk penjual jajanan di lingkungan sekolah dasar Kelurahan Menteng Dalam. Penelitian menggunakan pendekatan Mixed Method model Concurrent Embedded, di mana data kuantitatif dan kualitatif dikumpulkan secara simultan. Data kuantitatif diperoleh melalui kuesioner tertutup (pengetahuan, sikap, praktik) dengan 60 responden. Data kualitatif diperoleh melalui observasi lapangan dan wawancara. Analisis dilakukan dengan statistik deskriptif dan triangulasi data. Berdasarkan data numerik, hasil penelitian menunjukkan bahwa rata-rata tingkat pengetahuan penjual jajanan adalah 50,62 (kategori kurang), sikap sebesar 80,03 (kategori baik), dan praktik sebesar 70,75 (kategori cukup). Temuan kualitatif mendukung hasil tersebut, di mana masih terdapat kesenjangan pemahaman terutama terkait bahan kimia berbahaya dan praktik pengolahan pangan yang aman. Penelitian ini merekomendasikan perlunya edukasi berkelanjutan berbasis komunitas bagi penjual jajanan sekolah untuk meningkatkan pemahaman dan penerapan prinsip keamanan pangan, guna melindungi kesehatan anak-anak sekolah dasar. ***** Food safety regarding school children's snacks is an urgent public health issue that requires serious attention. According to the World Health Organization (WHO, 2020), approximately 2 million children die annually due to the consumption of unsafe food. In Indonesia, 15.9% of food poisoning outbreaks occur within educational institutions, particularly elementary schools (BPOM, 2020). Elementary school children are classified as a vulnerable group due to their underdeveloped immune systems. Addressing this concern, this study aims to analyze the level of knowledge, attitudes, and practices (KAP) related to food safety among street food vendors around elementary schools in Menteng Dalam Subdistrict, South Jakarta, with the objective of providing a reference for the development of educational programs targeted at these vendors. This research employed a Concurrent Embedded Mixed Methods approach, in which quantitative and qualitative data were collected simultaneously. Quantitative data were obtained through structured questionnaires (knowledge, attitude, practice) involving 60 respondents. Qualitative data were gathered through field observations and interviews. The data were analyzed using descriptive statistics and data triangulation. The numerical findings indicated that the average knowledge score of street food vendors was 50.62 (categorized as Poor), attitude score was 80.03 (categorized as Good), and practice score was 70.75 (categorized as Fair). Qualitative findings supported the quantitative results, revealing notable gaps in understanding, particularly regarding hazardous chemical substances and safe food handling practices. The study recommends the implementation of continuous, community-based educational interventions for street food vendors around elementary schools, aimed at enhancing their knowledge and application of food safety principles, in order to safeguard the health of elementary school children.
