Abstract
Penelitian ini bertujuan untuk mengetahui dan menganalisis kualitas sensori boba dengan gula pasir dan sari daun kelor sebagai isian minuman siap saji berdasarkan karakteristik organoleptik meliputi warna, aroma, rasa, kekenyalan, aftertaste, dan keseragaman bentuk serta menentukan formulasi terbaik berdasarkan uji kualitas. Penelitian ini menggunakan metode eksperimen pada pembuatan boba dengan berbagai konsentrasi sari daun kelor yang berasal dari daun kelor muda yang di blanching. Pengujian dilakukan oleh 10 panelis terbatas menggunakan metode kuantitatif deskriptif. Sari daun kelor 100% dibuat menggunakan perbandingan daun kelor dan air 1:1. Hasil penelitian menunjukkan bahwa sari daun kelor dapat ditambahkan pada pembuatan boba dengan konsentrasi 50%, 75%, dan 100% serta penggunaan brown sugar dapat digantikan dengan gula pasir dan bisa ditambahkan bahan tambahan seperti vanila. Perlakuan 50% menghasilkan boba berwarna hijau lumut, aroma dan rasa daun kelor kurang terasa, tekstur cukup kenyal, aftertaste kurang terasa, serta bentuk seragam. Perlakuan 75% menghasilkan karakteristik sensori lebih seimbang dengan aroma, rasa, aftertaste, dan tekstur yang dapat diterima panelis. Perlakuan 100% menghasilkan warna hijau lumut, aroma dan rasa daun kelor cukup terasa, tekstur kenyal, aftertaste kurang terasa, serta bentuk seragam. Berdasarkan penilaian overall, formulasi 75% sari daun kelor memperoleh tingkat penerimaan mutu tertinggi dan dipilih oleh 60% panelis sebagai formulasi terbaik. Berdasarkan hasil penelitian, dapat disimpulkan bahwa sari daun kelor berpotensi dimanfaatkan sebagai bahan tambahan dalam pembuatan boba untuk meningkatkan pemanfaatan pangan lokal dengan formulasi 75% sari daun kelor direkomendasikan karena menghasilkan keseimbangan karakteristik sensori terbaik. ***** This study aimed to determine and analyze the sensory quality of boba made with granulated sugar and moringa leaf filtrate, intended as a filling for ready-to-drink beverages, based on organoleptic characteristics including color, aroma, taste, chewiness, aftertaste, and shape uniformity, and to determine the best formulation based on sensory assessment. An experimental method was employed to produce boba with different concentrations of moringa leaf filtrate prepared from blanched young moringa leaves. Sensory evaluation was conducted by 10 semi-trained panelists using the Quantitative Descriptive method. The 100% filtrate was prepared at a 1:1 leaf-to-water rasio. The results showed that Moringa leaf filtrate can be incorporated into boba at concentrations of 50%, 75%, and 100%. In addition, brown sugar can be replaced with granulated sugar, while vanilla may be added as a complementary ingredient to improve the sensory characteristics of the product. The 50% treatment produced moss-green boba with a less noticeable moringa aroma and taste, moderate chewiness, a weak aftertaste, and uniform shape. The 75% treatment yielded more balanced characteristics, with acceptable aroma, taste, aftertaste, and texture. The 100% treatment produced moss-green boba with a more pronounced moringa aroma and taste, chewier texture, weak aftertaste, and uniform shape. Overall, the 75% formulation achieved the highest quality acceptance, selected by 60% of panelists as the best formulation. Based on the findings, it can be concluded that moringa leaf filtrate has the potential to be used as an additional ingredient in boba production to promote the utilization of local food resources. The formulation containing 75% moringa leaf filtrate is recommended because it provides the best balance of sensory characteristics.
