Abstract

Kegiatan industri tahu di Indonesia didominasi oleh usaha skala kecil dengan modal yang terbatas. Penggunaan teknologi yang terkadang masih sederhana sehingga dinilai akan terjadi inefisiensi yang dapat menimbulkan pemborosan baik dalam penggunaan bahan baku, proses produksi ataupun dalam penggunaan energi.Munculnya limbah pada aktivitas industri sulit untuk dihindari dan membutuhkan biaya yang cukup besar bagi perusahaan untuk menanggulanginya. Produksi Bersih merupakan suatu proses produksi yang bersifat preventif dan terpadu terkait dengan proses produksi, produk, dan jasa.Produksi Bersih adalah penerapan secara kontinyu suatu strategi pencegahan lingkungan yang terpadu untuk Proses, Produk dan layanan untuk meningkatkan efisiensi keseluruhan dan mengurangi risiko terhadap manusia dan lingkungan. Langkah-langkah produksi bersih dimulai dari perencanaan dan organisasi, pengkajian, identifikasi opsi, analisa kelayakan dari opsi-opsi, penerapan dan pemantauan opsi serta perbaikan terus menerus. Penerapan produksi bersih telah menghasilkan efisiensi di energi, material, dan air baik di industri besar, sedang maupun kecil. Penelitian dilakukan dengan metode deskriptif kualitatif dengan wawancara yang emnjadi data primer yang didukung dengan data sekunder yang diperoleh melalui observasi dan analisis data langsung ke lapang. Hasil penelitian menunjukan pengelolaan limbah cair Industri Tahu Karya Perdana belum dilakukan dengan baik serta kurang sadarnya pelaku industri terhadap penerapan produksi bersih dan tata apik kerumahtanggaan (good housekeeping) sehingga masih besar kemungkinan terjadinya kecelakaan kerja. Kesimpulannya adalah Industri Tahu Karya Perdana belum menerapkan produksi bersih dan Good Housekeeping namun besar kemungkinan untuk diterapkan. The use of technology that is sometimes still simple so that it is considered that there will be inefficiencies that can cause waste both in the use of raw materials, production processes or in the use of energy. The emergence of waste in industrial activities is difficult to avoid and requires considerable costs for companies to cope. Clean Production is a preventive and integrated production process related to production processes, products, and services. Clean Production is the continuous implementation of an integrated environmental prevention strategy for Processes, Products and services to improve overall efficiency and reduce risks to people and the environment.Net production measures start from planning and organization, assessment, option identification, feasibility analysis of options, application and monitoring of options and continuous improvement. The application of clean production has resulted in efficiencies in energy, materials, and water in both large, medium and small industries. Research is conducted with qualitative descriptive methods with interviews that become primary data supported by secondary data obtained through observation and analysis of data directly into the field. The results of the study showed that the liquid waste management of The Prime Work Has not been done well and the lack of awareness of industry players to the application of clean production and good housekeeping so that there is still a possibility of work accidents. The conclusion is that The Prime Work Know Industry has not implemented clean production and Good Housekeeping but is most likely to be applied. Keywords: Industry Tofu, Waste Tofu, Clean Production
