Abstract
Penelitian ini bertujuan untuk mengetahui tingkat persepsi karyawan terhadap Green practices pada Food and Beverage Department di Hotel Bintang Lima Jakarta. Green practices merupakan serangkaian aktivitas operasional ramah lingkungan yang meliputi konservasi energi, konservasi air, pengelolaan limbah, pembelian produk berkelanjutan, serta pelibatan karyawan dan konsumen. Penelitian ini menggunakan metode kuantitatif deskriptif dengan teknik pengumpulan data melalui penyebaran kuesioner kepada 80 responden yang merupakan staf di departemen terkait. Hasil penelitian menunjukkan bahwa sebagian besar responden (71,3%) menilai penerapan green practices berada pada kategori “Sedang”, sedangkan 28,7% menilai dalam kategori “Baik”, dan tidak ada yang menilai dalam kategori “Buruk”. Rata-rata skor keseluruhan sebesar 76,8 dengan standar deviasi 7 menunjukkan persepsi yang relatif konsisten namun belum optimal. Hambatan utama yang ditemukan adalah kurangnya pelatihan, sosialisasi, serta keterlibatan aktif dari seluruh staf operasional. Temuan ini menunjukkan bahwa meskipun terdapat komitmen awal terhadap praktik keberlanjutan, implementasinya belum terintegrasi secara menyeluruh dalam budaya kerja. Oleh karena itu, diperlukan upaya peningkatan edukasi, sistem evaluasi, dan integrasi strategi hijau dalam proses kerja sehari-hari agar green practices dapat dijalankan secara efektif dan berkelanjutan. ***** This study aims to determine the level of employee perception of Green practices in the Food and Beverage Department of a Five-Star Hotel in Jakarta. Green practices are a series of environmentally friendly operational activities that include energy conservation, water conservation, waste management, purchasing sustainable products, and employee and consumer engagement. This study used a descriptive quantitative method with data collection techniques through distributing questionnaires to 80 respondents who were staff in the relevant department. The results showed that the majority of respondents (71.3%) rated the implementation of green practices as “Moderate,” while 28.7% rated it as “Good,” and none rated it as “Poor.” The overall average score of 76.8 with a standard deviation of 7 indicates a relatively consistent but less than optimal perception. The main obstacles found were the lack of training, socialization, and active involvement of all operational staff. These findings indicate that despite an initial commitment to sustainable practices, their implementation has not been fully integrated into the work culture. Therefore, efforts are needed to improve education, evaluation systems, and the integration of green strategies into daily work processes so that green practices can be implemented effectively and sustainably.
