Abstract

RISKHA JULIA FAUZIYAH. Ketupat Cap Go Meh Ny. Kartika Tjandra: Dari Kuliner Simbolik ke Kuliner Legendaris Peranakan Tionghoa Jawa di Glodok (1965-2003). Skripsi. Jakarta. Program Studi Pendidikan Sejarah, Fakultas Ilmu Sosial, Universitas Negeri Jakarta, 2022. Penelitian ini bertujuan untuk merekontruksi sejarah akulturasi budaya antara etnis Tionghoa dan Nusantara dalam bidang kuliner khususnya Ketupat Cap Go Meh. Penelitian ini menggunakan metode historis yang terdiri dari heuristik, kritik, interpretasi dan penulisan. Temuan penelitian ini menunjukkan bahwa Ketupat Cap Go Meh sebagai kuliner simbolik yang kian legendaris bagi Peranakan Tionghoa Jawa karena kombinasi hidangan yang disuguhkan masing-masing memiliki makna simbolis. Ketupat Cap Go Meh Ny. Kartika merupakan kedai yang didirikan oleh keturunan Peranakan Tionghoa Jawa yang bertempat di kawasan pecinan Glodok. Menu yang disajikan oleh kedai ini kerap dikenal sebagai hidangan simbolik Peranakan Tionghoa. Namun, setelah puluhan tahun berdiri dan menu yang dijual pun juga merupakan sajian yang lumayan jarang ditemui, akhirnya sematan legendaris pun lekat dengan kedai ini. History Education Study Program, Faculty of Social Sciences, Jakarta State University, 2022. This research aimed to reconstruct the history of cultural acculturation between ethnic Chinese and Nusantara in the culinary field, especially Ketupat Cap Go Meh. This research uses the historical method consisting of heuristics, criticism, interpretation, and writing. The findings of this research show that Ketupat Cap Go Meh as a symbolic culinary is increasingly legendary for the Peranakan Javanese Chinese community because the combination of dishes served each has a symbolic meaning. Warung Ketupat Cap Go Meh Ny. Kartika is a stall founded by Peranakan Javanese Chinese descendants located in the Chinatown area of Glodok. The menu served by this stall is often known as a symbolic Peranakan Chinese dish. However, after decades of existence and the menu sold is also a fairly rare dish, finally the legendary frills were attached to this stall.
