Abstract
Penelitian ini bertujuan mengembangkan dan menilai kelayakan media pembelajaran berbasis video pada materi perhitungan harga jual di mata kuliah Dasar Manajemen Usaha Jasa Boga, Program Studi Pendidikan Tata Boga, Universitas Negeri Jakarta. Pengembangan dilakukan dengan metode Research and Development (R&D) menggunakan model ADDIE (Analysis, Design, Development, Implementation, Evaluation). Analisis kebutuhan menunjukkan bahwa 81,5% mahasiswa belum pernah melihat video tutorial terkait perhitungan harga jual sehingga 96,3% dari 27 responden setuju untuk diadakan pengembangan media pembelajaran video tutorial pada materi perhitungan harga jual. Media dikembangkan melalui tahapan sistematis mulai dari analisis kebutuhan, desain instrumen dan dokumen pendukung, produksi video tutorial, hingga validasi oleh ahli materi, media, dan bahasa, serta uji coba secara individual, kelompok kecil, dan kelompok besar. Terakhir dilakukan uji respon mahasiswa untuk menganalisis tingkat penerimaan mahasiswa terhadap media yang sudah dikembangkan. Hasil validasi menunjukkan media sangat layak digunakan, dengan nilai kelayakan 95% dari ahli materi, 93% dari ahli media, dan 95% dari ahli bahasa. Uji coba pada mahasiswa juga menunjukkan kelayakan sangat tinggi, yaitu 91% (One to One), 93% (Small Group), 94% (Field Group), dan terakhir uji respon mahasiswa menunjukkan persentase kelayakan sebesar 96%. Media video yang dikembangkan dinilai efektif meningkatkan pemahaman dan antusiasme mahasiswa, serta dapat digunakan secara fleksibel dan berulang dalam pembelajaran perhitungan harga jual dalam mata kuliah Dasar Manajemen Usaha Jasa Boga. ***** This study aims to develop and assess the feasibility of video-based learning media on the material of selling price calculation in the Basic Management of Food Service Business course, Culinary Education Study Program at Universitas Negeri Jakarta. The development was carried out using the Research and Development (R&D) method using the ADDIE model (Analysis, Design, Development, Implementation, Evaluation). Needs analysis showed that 81.5% of students had never seen a video tutorial related to calculating selling prices, so 96.3% of the 27 respondents agreed that video tutorial learning media should be developed for the material on calculating selling prices. The media was developed through systematic stages, starting from needs analysis, design of instruments and supporting documents, production of tutorial videos, to validation by experts in the subject matter, media, and language, as well as trials in individual, small group, and large group settings. Finally, a student response test was conducted to determine the level of student acceptance of the developed media. The validation results show that the media is very feasible to use, with a feasibility score of 95% from subject matter experts, 95% from media experts, and 93% from language experts. Trials with students also showed very high feasibility, with results of 91% (One to One), 93% (Small Group), 94% Field Group), and the student response tests showed a feasibility percentage of 96%. The developed video media was assessed as effective in enhancing students' understanding and enthusiasm, and can be used flexibly and repeatedly in teaching sales price calculation in the Food Service Management Fundamentals course.
