Abstract
Tugas akhir ini bertujuan untuk mendapatkan formula terbaik tofu fingers. Dengan melakukan uji coba sebanyak 2 kali,dengan melibatkan dua dosen validator sebagai panelis ahli. Uji coba ke-1 dan uji coba ke-2 dilakukan di Laboratorium Pengolahan Makanan Tata Boga, Universitas Negeri Jakarta. Tofu fingers merupakan makanan jajanan yang berbahan dasar tahu sutra yang dicampur dengan beberapa sayuran yaitu : jamur tiram, jamur kuping, wortel dan pokcoy. Penilaian produk ini meliputi 8 aspek, dengan hasil uji validasi aspek warna dalam tofu fingers yang berada pada kategori putih keabuan, aspek rasa tofu fingers yaitu gurih, aspek tekstur tofu fingers lembut, aspek aroma tofu fingers beraroma tahu dan jamur, aspek bentuk tofu fingers tergulung rapi, aspek rasa mashroom sauce cukup terasa jamur, aspek konsistensi mashroom sauce kental, dan aspek aroma mashroom sauce beraroma jamur. Rata-rata nilai 4,125 yang berada pada standar ke-2 terbaik dari kriteria yang sudah ditentukan oleh penulis dan dosen pembimbing yaitu produk tofu fingers ini disukai oleh panelis. Produk tofu fingers dapat dijual kepada masyarakat dengan harga Rp.10.000 per porsi dengan berat bersih produk 100 g perporsi. ***** This final project aims to get the best tofu fingers formula. By conducting trials 2 times, involving two validator lecturers as expert panelists. The 1st and 2nd trials were conducted at the Food Processing Laboratory, State University of Jakarta. Tofu fingers is a snack food made from silken tofu mixed with several vegetables, namely: oyster mushrooms, ear mushrooms, carrots and pokcoy. The assessment of this product includes 8 aspects, with the results of the validation test for the color aspect in tofu which is in the grayish white category, the taste aspect of the tofu is savory, the soft texture aspect of the tofu, the aroma aspect of the tofu and mushroom-scented tofu, the rolled tofu fingers shape aspect. neat, the taste aspect of the mashroom sauce is quite mushroomy, the consistency aspect of the mashroom sauce is thick, and the aroma aspect of the mashroom sauce smells like mushrooms. The average value is 4,125 which is in the 2nd best standard from the criteria determined by the author and the supervisor, namely this tofu product is favored by the panelists. Tofu fingers products can be sold to the public at a price of IDR 10,000 per portion with a net weight of 100 g per portion.
