Abstract
Penelitian ini bertujuan untuk menganalisis tentang bagaimana implementasi atau penerapam food waste management di hotel Novotel Jakarta Cikini. Food waste management adalah sebuah metode atau cara pengolahan sampah sisa makanan yang bertujuan untuk mengurangi adanya penumpukan dan timbulan sampah sisa makanan dari mulai penerimaan bahan makanan sampai dengan makanan sisa tamu di atas piring. Penelitian ini dilaksanakan di hotel Novotel Jakarta Cikini, Jakarta Pusat dengan pemilihan lokasi secara sengaja atau purposive sampling pada bulan Juni sampai dengan Agustus 2023. Metode penelitian yang digunakan ialah pendekatan kualitatif deskriptif dengan menggunakan teknik wawancara dengan para responden, observasi terkait alur penerapan food waste management dan dokumentasi terkait kegiatan food waste management yang sedang berlangsung. Subjek pada penelitian ini adalah 7 karyawan yang berperan dalam pengolahan sampah makanan atau food waste di hotel Novotel Jakarta Cikini. Hasil penelitian menunjukkan bahwa penerapan food waste management terbilang cukup baik, karena dapat menekan timbulan sampah sisa makanan dari 120kg/hari menjadi 60-99kg/hari. Beberapa program yang diberlakukan seperti pembuatan kompos dari sampah sisa makanan, mendonasikan makanan ke yayasan yang bekerjasama dengan hotel, pembuatan poster himbauan tentang food waste, pengolahan dari sisa bahan makanan menjadi produk baru yang layak konsumsi dan pengurangan ukuran peralatan makan dirasa cukup baik dan bervariasi bagi hotel Novotel Jakarata Cikini dalam usaha mengurangi sampah sisa makanan. ***** This research aims to analyze the implementation of food waste management at Novotel Jakarta Cikini hotel. Food waste management is a method or process of handling food waste with the goal of reducing the accumulation and generation of food waste from the moment food ingredients are received to the leftover food on guests' plates. This study was conducted at Novotel Jakarta Cikini hotel, Central Jakarta, using purposive sampling from June to August 2023. The research methodology employed was a qualitative descriptive approach, utilizing interview techniques with respondents, observation of the food waste management process, and documentation of ongoing food waste management activities. The subjects of this study were 7 employees responsible for food waste management at Novotel Jakarta Cikini hotel. The research findings indicate that the implementation of food waste management is relatively effective, as it reduced food waste generation from 120 kg/day to 60-99 kg/day. Several programs were implemented, such as composting food waste, donating food to charities in collaboration with the hotel, creating awareness posters about food waste, processing leftover food into consumable products, and reducing the size of dining equipment. These efforts were considered effective and varied, contributing to Novotel Jakarta Cikini's efforts to reduce food waste.
