Abstract

Penelitian ini bertujuan untuk mendeskripsikan perencanaan, implementasi, dan evaluasi model pembelajaran Teaching Factory dalam penyiapan kompetensi Keahlian Tata Boga di SMK Negeri 27 Jakarta. Teaching Factory merupakan model pembelajaran berbasis produksi atau jasa yang mengintegrasikan proses pembelajaran dengan dunia industri. Metode penelitian yang digunakan adalah deskriptif kualitatif dengan teknik pengumpulan data melalui wawancara, observasi, dan studi dokumentasi. Hasil penelitian menunjukkan bahwa perencanaan Teaching Factory dilakukan secara sistematis dengan melibatkan kepala sekolah, ketua program, guru produktif, dan tim keuangan. Implementasi pembelajaran dilakukan melalui kegiatan produksi nyata seperti pengelolaan catering, bakery, dan cafeteria, yang dilaksanakan oleh siswa sebagai bagian dari proses pembelajaran berbasis proyek (project-based learning). Evaluasi dilakukan secara berkala melalui pelaporan keuangan, monitoring proses produksi, serta penilaian keterampilan siswa. Faktor pendukung keberhasilan implementasi Teaching Factory meliputi ketersediaan sarana prasarana, dukungan regulasi BLUD, dan sinergi antar tim pengajar. Kendala yang dihadapi antara lain miskonsepsi antar guru, keterbatasan waktu praktik, dan hambatan logistik, yang diatasi melalui koordinasi internal dan penyesuaian sistem pelaksanaan. Secara keseluruhan, model pembelajaran Teaching Factory terbukti efektif dalam meningkatkan kompetensi siswa serta menumbuhkan jiwa kewirausahaan. **** This study aims to describe the planning, implementation, and evaluation of the Teaching Factory learning model in the Culinary Arts Competency Program at SMK Negeri 27 Jakarta. The Teaching Factory is a product- or service-based learning model that integrates the educational process with industrial standards. This research employed a qualitative descriptive method with data collection techniques including interviews, observations, and document analysis. The findings indicate that the Teaching Factory planning is carried out systematically involving the principal, program head, productive subject teachers, and the financial team. Implementation is conducted through real production activities such as catering, bakery, and cafeteria management, carried out by students as part of project-based learning. Evaluation is conducted periodically through financial reporting, monitoring of production processes, and student skill assessments. Supporting factors for the successful implementation include the availability of infrastructure, BLUD policy support, and collaboration among teaching staff. Challenges encountered include misconceptions among teachers, limited practical time, and logistical constraints, which are addressed through internal coordination and system adjustments. Overall, the Teaching Factory learning model has proven effective in enhancing student competencies and fostering entrepreneurial skills.
