Abstract

Penelitian ini merupakan penelitian pengembangan (Research and Development) yang bertujuan untuk menghasilkan media video tutorial materi fruit cutting and platting pada Mata Kuliah Dasar Tata Hidang. Model pengembangan yang digunakan adalah model 4D (Define, Design, Develop, Disseminate) yang dikembangkan oleh Thiagarajan, Semmel, dan Semmel. Subjek uji coba dalam penelitian ini adalah mahasiswa Program Studi Pendidikan Tata Boga Universitas Negeri Jakarta. Teknik pengumpulan data dilakukan melalui wawancara, angket validasi ahli, serta uji coba kepada pengguna melalui tiga tahap: one-to-one, small group, dan field test. Instrumen penelitian divalidasi oleh tiga orang ahli, yaitu ahli materi, ahli media, dan ahli bahasa, untuk menjamin kualitas isi dan tampilan media yang dikembangkan. Hasil validasi menunjukkan bahwa media tergolong layak: ahli materi memperoleh skor 78% (kategori layak), ahli media 88% (sangat layak), dan ahli bahasa 80% (layak). Hasil uji coba kepada pengguna juga menunjukkan skor sangat baik, yaitu one-to-one sebesar 86%, small group 93%, dan field group 89%. Respon mahasiswa terhadap media mencapai 91%, yang menunjukkan bahwa media sangat membantu dalam pembelajaran mandiri, terutama dalam memahami langkah-langkah praktik dengan visualisasi yang jelas. Dengan demikian, media video tutorial yang dikembangkan dinyatakan layak dan efektif sebagai alternatif media pembelajaran yang mendukung keterampilan mahasiswa dalam praktik fruit cutting and platting. ***** This study is a research and development (R&D) project aimed at producing a video tutorial as a learning medium for the topic of fruit cutting and plating in the Basic Table Setting course. The development model used is the 4D model (Define, Design, Develop, Disseminate), developed by Thiagarajan, Semmel, and Semmel. The trial subjects in this study were students of the Culinary Education Study Program at Universitas Negeri Jakarta. Data collection techniques included interviews, expert validation questionnaires, and user trials conducted in three stages: one-to-one, small group, and field test. The research instruments were validated by three experts—content expert, media expert, and language expert—to ensure the quality of the content and appearance of the developed media. The validation results indicated that the media was categorized as feasible: the content expert gave a score of 78% (feasible), the media expert 88% (highly feasible), and the language expert 80% (feasible). The results of the user trials also showed excellent scores: one-to-one 86%, small group 93%, and field test 89%. Student responses to the media reached 91%, indicating that the video tutorial greatly supported independent learning, particularly in understanding practical steps through clear visualizations. Therefore, the developed video tutorial media is considered feasible and effective as an alternative learning tool to support students' practical skills in fruit cutting and plating.
