Abstract

Penelitian ini bertujuan untuk mengembangkan media video tutorial pengolahan daging dengan metode grilling dan shallow frying pada mata pelajaran Pengolahan dan Penyajian Makanan Kontinental di Sekolah Menengah Kejuruan (SMK) Negeri 27 Jakarta. Penelitian ini menggunakan metode penelitian dan pengembangan (Research and Development) dengan model pengembangan Bergman dan Moore yang meliputi enam tahap, yaitu analisis, desain, pengembangan, produksi, penggabungan, dan validasi. Subjek penelitian meliputi ahli materi, ahli media, ahli bahasa, serta peserta didik SMK sebagai pengguna media. Teknik pengumpulan data dilakukan melalui kuesioner, penelitian ini menggunakan instrumen uji validasi ahli media, ahli materi, dan ahli bahasa, serta instrumen uji coba one to one, small group, dan field test, serta instrumen respon pengguna. Teknik analisis data pada yang digunakan pada penelitian ini yaitu deskriptif kuantitatif. Hasil penelitian menunjukkan bahwa media video tutorial pengolahan daging dengan metode grilling dan shallow frying pada mata pelajaran Pengolahan dan Penyajian Makanan Kontinental kelayakan tinggi dalam mendukung proses pembelajaran. Media ini dinilai sangat layak oleh para ahli dengan persentase kelayakan sangat baik: 82,2% untuk media, 90% untuk materi, dan 91,4 untuk Bahasa. Uji coba menunjukkan penerimaan positif dengan nilai 86,6% pada uji perorangan, 89,8% pada uji kelompok kecil, 93,5% pada uji coba lapangan, serta mendapatkan 94,4% respon sangat positif dari pengguna. Haisl pengembangan ini menunjukkan bahwa media video tutorial pengolahan daging dengan metode grilling dan shallow frying dinyatakan layak digunakan sebagai media pembelajaran untuk mendukung proses pembelajaran Pengolahan dan Penyajian Makanan Kontinental di SMK Negeri 27 Jakarta.***** This study aims to develop a tutorial video as a learning medium for meat processing using the grilling and shallow frying methods in the subject Continental Food Processing and Presentation at SMK Negeri 27 Jakarta (Vocational High School of Jakarta 27). The study employed a Research and Development (R&D) method using the Bergman and Moore development model, which consists of six stages: analysis, design, development, production, integration, and validation. The research subjects included subject-matter experts, media experts, language experts, and vocational high school students as the media users. Data were collected through questionnaires. The study used validation instruments for media experts, subject-matter experts, and language experts, as well as trial instruments for one-to-one testing, small-group testing, and field testing, along with a user response instrument. The data analysis technique used in this study was descriptive quantitative analysis. The results showed that the tutorial video media for meat processing using grilling and shallow frying methods in the subject Continental Food Processing and Presentation has high feasibility in supporting the learning process. The media was rated as very feasible by experts, with excellent feasibility percentages: 82.2% for media, 90% for content, and 91.4% for language. The trials indicated positive acceptance, with scores of 86.6% in the individual test, 89.8% in the small-group test, and 93.5% in the field test, and it received a very positive user response score of 94.4%. These development results indicate that the tutorial video media for meat processing using grilling and shallow frying methods is suitable for use as a learning medium to support the learning process of Continental Food Processing and Presentation at SMK Negeri 27 Jakarta.
