Abstract

Penelitian ini bertujuan untuk menganalisis perencanaan dan strategi rintisan usaha pada produk Nabure Bites, yaitu makanan ringan yang mempunyai rasa yang manis dan gurih. Produk ini merupakan hasil inovasi dari coconut cookies menggunakan substitusi ampas kelapa, yang selama ini dikenal sebagai limbah, namun diolah menjadi makanan bernilai jual tanpa mengurangi cita rasa khas Coconut Cookies. Rintisan usaha ini di lakukan di Laboratorium Pastry dan Bakery Program Studi Sarjana Terapan Seni Kuliner dan Pengelolaan Jasa Makanan Fakultas Teknik Universitas Negeri Jakarta yang dimulai pada bulan Juni 2025 sampai bulan Juli 2025. Penelitian ini mencakup identifikasi ide produk, analisis target pasar, penyusunan strategi pemasaran, hingga perhitungan biaya dan penjualan. Data diperoleh melalui penyebaran form kuesioner kepada calon konsumen untuk mengetahui minat dan tanggapan mereka terhadap produk Nabure Bites. Hasil penelitian menunjukkan bahwa Nabure Bites mendapat respon positif dari konsumen yang peduli terhadap makanan sehat dan ramah lingkungan. Hasil penelitian menunjukkan bahwa Nabure Bites mendapat respon positif dari konsumen yang peduli terhadap makanan sehat dan ramah lingkungan. Walaupun target omzet belum sepenuhnya tercapai karena waktu penjualan yang singkat, hasil penjualan sudah mendekati target awal, yaitu sebesar Rp1.920.000 dari total target sebesar Rp2.160.000, atau sebesar 88,9%. Hal ini menunjukkan bahwa produk ini memiliki potensi untuk dikembangkan lebih lanjut sebagai usaha rintisan yang ramah lingkungan dan bernilai ekonomis. ***** This study aims to analyze the planning and strategies involved in the startup development of Nabure Bites, a light snack product with a sweet and savory taste. The product is an innovation derived from coconut cookies, utilizing coconut pulp as a substitute ingredient. Coconut pulp, typically considered waste, is processed into a marketable food product without compromising the distinctive flavor of traditional coconut cookies. This startup initiative was carried out at the Pastry and Bakery Laboratory of the Bachelor of Applied Culinary Arts and Food Service Management Program, Universitas Negeri Jakarta, from June 2025 to July 2025. The research covers product idea identification, market target analysis, marketing strategy development, and cost and sales calculations. Data were collected through the distribution of questionnaires to prospective consumers to assess their interest and response to Nabure Bites. The results indicate that Nabure Bites received positive feedback, especially from consumers who are concerned about healthy and environmentally friendly food choices. Although the sales target was not fully achieved due to the short selling period, the product achieved a sales revenue of Rp1,920,000 out of a target of Rp2,160,000, or approximately 88.9% of the total target. These findings suggest that Nabure Bites has strong potential to be further developed as an eco-friendly and economically valuable startup venture.
